"What is a meal without jalapeño? In Texas, they're everywhere," explains Texan chef Angela Taliaferro. Eaten like candy, smoked, dried or fresh – jalapeño is everywhere in Texan cuisine.Â

Slice the salmon into portioned pieces. Prepare aluminium foil in shapes that fit the fish pieces. Place lime and orange slices inside the foil and place the fish on top of these.Mix together: juice, grated lime zest, honey, jalapeñoand garlic. Pour the mixture over the salmon and close the foil. Place the packets on a tray.Â
"It's best to use an iron pan on the fire or on the grill. Place the foil packets directly on the iron pan. When the core temperature hits 60 degrees Celsius, they're ready," Angela explains.Â
