Four simple recipes for glazing smoked salmon

"Sometimes you just need something super-fast and super tasty. Salt and pepper can become very boring in the long run. Here are four simple and exciting marinade recipes that make your salmon taste completely new," says American chef Angela Taliaferro. 

You can make all four to spice up an everyday dinner or opt for just one marinade. 

Select your desired marinade and mix all the ingredients together. Rub the mixture into the fish 1/2 hour before placing it on the grill. 

Smoke at 120 degrees Celsius for 30–60 minutes until the core temperature is 45–48 degrees Celsius.

Marinade with pepper and orange

  • Equal amount of grated orange, lemon and lime zest Salt and pepper 1 pcs

Saigon Salmon

  • Finely chopped shallots 1 tbsp
  • Chilli 1 tsp
  • Garlic clove, grated 1 pcs
  • Ginger, grated 1 tsp
  • Soy sauce 1 tbsp
  • Lemongrass, finely chopped 1 tsp

Marinade for chipotle glazed salmon

  • Mashed chipotle chili in adobo sauce 1 tbsp
  • Honey 1 tbsp
  • char siu sauce (Chinese BBQ sauce or other fruity BBQ sauce) 1 tbsp

Marinade for typical Nordic salmon

  • Finely chopped fresh dill 1 tbsp
  • Sour cream 2 tbsp
  • Salt and pepper, to taste 1 pcs
